No bake urban granola cluster by Community Chef
If you are looking for a healthy and delicious snack that you can make in minutes, try
this recipe. It is packed with protein, fiber, antioxidants and natural sweetness from the
dried fruits. You can use any combination of seeds and dried fruits that you have on
hand, or follow this suggested mix for a tropical twist.
Ingredients
- 1/4 cup of maple syrup, agave syrup or coconut nectar
- 1 and 1/2 cups of quinoa flakes or rolled oats
- 3/4 cup of chia seeds
- 1/2 cup of mixed dried fruits, such as currants, raisins, blueberries, cranberries, sliced
dried mango, pitted dates, and dried coconut flakes. - Directions
- In a small saucepan over low heat, warm the maple syrup until it is
slightly runny. You can also do this in the microwave for a few
seconds. - In a large bowl, toss the quinoa flakes or oats
with the chia seeds until well combined. - Add the dried fruits and mix well.
- Pour the warm maple syrup over the
mixture and stir until everything is
coated and sticky. - Using a tablespoon or your
hands, scoop out small clusters
of the granola and place them
on a baking sheet lined with
parchment paper. You can make
them as big or as small as you like. - Refrigerate the clusters for at least
an hour or until they are firm. - Enjoy as a snack or breakfast on
the go. Store the leftovers in an
airtight container in the refrigerator for up to
a week.
